Sirloin Tip Roast

Ingredients:

  • 3 to 4-pound sirloin tip roast
  • 1 cup red wine (such as Cabernet Sauvignon or Merlot)
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • Salt and freshly ground black pepper, to taste

Instructions:
1. Prepare the Marinade: In a bowl, whisk together the red wine, olive oil, minced garlic, rosemary, thyme, soy sauce, Dijon mustard, salt, and pepper.
2. Marinate the Roast: Place the sirloin tip roast in a resealable plastic bag or a shallow dish. Pour the marinade over the roast, ensuring it’s fully coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
3. Cook the Roast: Preheat your oven to 325°F (163°C). Remove the roast from the marinade and pat dry with paper towels. Reserve the marinade. Place the roast in a roasting pan or dutch oven and roast for about 1.5 to 2 hours or until the internal temperature reaches 135°F (57°C) for medium-rare. Baste periodically with the reserved marinade for added flavor.
4. Rest and Serve: Allow the roast to rest for 10-15 minutes before slicing. Serve with your choice of sides and enjoy the tender, flavorful results!
