Roasted Pumpkin Seeds

Ingredients

  • 1 cup raw pumpkin seeds
  • 6 cups water
  • 1 tablespoon sea salt and 1/4 teaspoon sea salt
  • 1 tablespoon olive oil

Instructions

  1. Scoop seeds from a fresh pumpkin
  2. Clean seeds from pumpkin flesh, thoroughly rinsing in a colander
  3. Preheat oven to 350o
  4. Place rinsed pumpkin seeds, water, and 1 tablespoon salt in a saucepan and boil for 10 minutes
  5. Strain pumpkin seeds, mix in oil and 1/4 teaspoon salt
  6. Spread pumpkin seeds on baking sheet and bake for 40 minutes, stirring frequently

**Add 1 teaspoon lime and 1/2 teaspoon chili powder to seeds before baking for an extra flavor option
