Delicata Squash Pizzettes

Indulge in a gourmet twist on classic pizza with delicata squash as the star of the show. These delightful pizzettes combines the sweetness of roasted squash with creamy goat cheese and peppery arugula. It’s a sophisticated and flavorful dish that’s guaranteed to impress.

Ingredients:

  • 1 medium delicata squash, thinly sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 ounces goat cheese, crumbled
  • 1 cup fresh arugula
  • 1 tablespoon balsamic glaze (optional)

Instructions:

1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Toss the thinly sliced delicata squash with 1 tablespoon of olive oil, salt, and pepper, then arrange them in a single layer on the baking sheet.

3. Roast the squash for about 15-20 minutes, until they are tender and lightly browned, turning halfway through the cook time. 

4. Crumble goat cheese over the roasted delicata.

5. Bake the pizza in the oven for 12-15 minutes, or until  golden and crisp.

6. Once baked, top with fresh arugula and drizzle with balsamic glaze if desired before serving.
