Peach Cobbler

Ingredients

  • 1 cup flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter
  • 1 egg
  • 1/4 cup milk
  • 1/3 cup sugar
  • 1 tablespoon flour
  • 1/4 cup water
  • 4 cups peaches sliced

Instructions

  1. Preheat oven to 400o
  2. Topping: Sift together 1 cup flour, 2 tablespoons sugar, baking powder, and cinnamon
  3. Cut the butter into the flour mixture until it forms coarse crumbles
  4. In a separate bowl combine egg and milk. Add to the flour mixture and stir just to moisten
  5. Filling: In a sauce pan combine 1/3 cup sugar, 1 tablespoon flour, water, and peaches. Simmer and stir frequently until thickened and bubbly
  6. Transfer the peaches into a buttered 2 quart baking dish
  7. Drop the topping in small mounds over the top
  8. Bake for 20-25 minutes until wooden toothpick comes out of the topping clean
