Honeydoo cupcakes

My daughter created this recipe when she was just an itty bitty thing. It warms my heart to remember those days.

Ingredients

  • 8 tablespoons butter
  • 1 cup sugar (plus enough to sprinkle on the top of cupcakes)
  • 4 eggs
  • 1 cup honey
  • 3 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 cups milk

Instructions

  1. Preheat over to 350o
  2. In a large mixing bowl cream butter and sugar
  3. Add eggs and honey. Mix until well combined.
  4. In a separate bowl combine flour, baking soda, and baking powder
  5. Pour the dry ingredients into the wet ingredients, alternating with the milk, and stir until just combined; be careful not to overmix.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake in preheated oven for 10 minutes
  8. Sprinkle each muffin generously with granulated sugar
  9. Bake for an additional 10 minutes, or until a toothpick inserted into the center comes out clean and the tops are lightly golden.
  10. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
