The Cake
Ingredients
- 3/4 cup dark sweet chocolate
- 2 1/2 cup white cake flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated white sugar
- 6 tablespoons butter
- 4 eggs (separated)
- whole milk
- 1 teaspoon vanilla extract
- 1 cup water
Instructions
- grease 2 8in round baking pans
- melt the chocolate over low heat
- cream the butter with the sugar
- add egg yolks
- heat the water in a separate pot to boiling
- In a separate bowl combine flour, baking soda, and salt
- add the melted chocolate to the butter, sugar and eggs
- add the flour mixture alternately with the milk, mixing only enough to combine
- add the vanilla
- beat the egg whites until it has stiff peaks and gently fold into batter only to combined
- add the boiling water, mix only to combined
- bake at 350o for 15 minutes until toothpick test clean
The Frosting
Ingredients
- 1 cup brown sugar
- 8 tablespoons butter
- 3 egg yolks
- 1 can evaporated milk
- 1 teaspoon vanilla extract
- 1 cup coconut flakes
- 1 cup pecans (chopped)
Instructions
- Combine all ingredients except coconut and pecans in a pan and heat until bubbling.
- remove from heat and add coconut flakes and pecan
- cool before frosting cake
