Ingredients
- 2 cups heavy cream
- 5 egg yolks
- 1/3 cup sugar
- 1 teaspoon vanilla
- pinch of salt
- 1/4 cup sugar
Instructions
- Preheat oven to 325o
- Heat up the cream in a sauce pan under low heat until starting to bubble
- In a bowl, beat together egg yolks, 1/3 cup of sugar, vanilla, and salt
- Add bubbling cream into egg mixture slowly while whisking
- Place 6 custard cups in a baking dish with 1 inch of water on the bottom. Pour the mixture into the custard cups.
- Bake for 30 minutes until toothpick test comes out clean.
- Remove cups from water and refrigerate until completely chilled. (at least 1 hour)
- Sprinkle remaining sugar over the tops of the custards, torch with a butane kitchen torch until the sugar caramelizes. Let cool until the caramelized sugar hardens.
