Aloo Palak is a vibrant and nutritious Indian dish that combines tender potatoes with fresh spinach, creating a deliciously comforting meal. Ingredients
- 1 1/2 lbs potatoes
- 1 1/2 lbs spinach
- 2 tablespoons olive oil
- 1 large white onion
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1/4 teaspoon chili powder
- 1/2 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon amchoor
- 2 tablespoons water
Instructions
- Boil the potatoes whole for 10 minutes
- Remove and cut into 3/4 inch chunks
- Fry the potato chunks in half the olive oil until golden brown, stirring often, then put aside
- In a separate pan fry the onion in the other half of the olive oil until pale golden brown
- Stir in ginger and garlic, fry until starting to brown
- Add chili, turmeric, and cumin
- Stir in spinach, cover and cook on low heat for 10-15 minutes
- Add the fried potatoes, amchoor and water
- Cook until evenly heated
