Sauerkraut Fritters

 Ingredients

  • 2 cups sauerkraut, well-drained and chopped
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 large eggs
  • 1/2 teaspoon pepper
  • Olive Oil for frying

Instructions

  1. In a large bowl, combine the chopped sauerkraut, flour, cornmeal, eggs, chopped onion, minced garlic, and a pinch of pepper. Mix well to combine.
  2. The batter should be thick but manageable; adjust with a little more flour or milk if necessary.
  3. In a large skillet or frying pan, pour enough oil to cover the bottom by about 1/4 inch. Heat the oil over medium-high heat until it shimmers but does not smoke.
  4. Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. Work in batches to avoid overcrowding the pan. Once fried, transfer the fritters to a plate lined with paper towels to drain any excess oil.
  5. Serve the sauerkraut fritters warm, with a side or remoulade for dipping.

**Optional: For extra flavor, consider adding grated cheese or chopped fresh herbs (like dill or parsley) to the batter.
