Savor the hearty goodness of sauerkraut fritters, a deliciously crispy dish that combines tangy fermented cabbage with savory ingredients for a unique flavor experience. Perfect as a snack, appetizer, or side dish, these fritters are easy to make and offer a delightful crunch in every bite!

Ingredients
- 2 cups sauerkraut, well-drained and chopped
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 large eggs
- 1/2 teaspoon pepper
- Olive Oil for frying

Instructions
- In a large bowl, combine the chopped sauerkraut, flour, cornmeal, eggs, chopped onion, minced garlic, and a pinch of pepper. Mix well to combine.
- The batter should be thick but manageable; adjust with a little more flour or milk if necessary.
- In a large skillet or frying pan, pour enough oil to cover the bottom by about 1/4 inch. Heat the oil over medium-high heat until it shimmers but does not smoke.
- Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. Work in batches to avoid overcrowding the pan. Once fried, transfer the fritters to a plate lined with paper towels to drain any excess oil.
- Serve the sauerkraut fritters warm, with a side or remoulade for dipping.
**Optional: For extra flavor, consider adding grated cheese or chopped fresh herbs (like dill or parsley) to the batter.
