Ingredients

  • 5 medium tomatoes
  • 2 cucumbers
  • 1 red bell pepper (stem and seeds removed)
  • 1/2 medium red onion
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

*Place all ingredients in a blender and blend until smooth. Chill in refrigerator for at least 2 hours. Garnish with green onions or parsley.
