Falafel

Ingredients

  • 1 medium potato
  • 1 bunch of parsley (minced)
  • 2 small white onions (finely chopped)
  • 3 tablespoons olive oil
  • 3 cups cooked garbanzo beans
  • 1/4 cup tahini
  • 1 tablespoon plain yogurt
  • 1/8 teaspoon garlic powder
  • 1 tablespoon salt
  • dash of cayenne
  • 1/8 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • juice of 1 lemon

Instructions

  1. Preheat oven to 350o
  2. Boil and mash the potato
  3. Mash the garbanzo beans separately
  4. Combine all ingredients and mix thoroughly
  5. Scoop 2 tablespoons at a time and form into balls. Place on greased cookie sheet
  6. Cook for 10 minutes on each side
