Carrot Ginger Soup

Ingredients:

  • 1 tablespoon olive oil or butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
  • 4 cups carrots, peeled and chopped (about 6-8 medium carrots)
  • 4 cups vegetable or chicken broth (find my broth recipes HERE and HERE)
  • 1 teaspoon ground cumin (optional)
  • Salt and pepper to taste
  • 1/2 cup coconut milk or heavy cream (optional, for creaminess)
  • Fresh cilantro or parsley for garnish (optional)

Instructions:

  1. Sauté Aromatics: In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  2. Add Carrots and Broth: Add the chopped carrots to the pot and stir to combine. Pour in the vegetable or chicken broth, ensuring the carrots are fully submerged. If using, add the ground cumin for an extra layer of flavor. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the carrots are tender.
  3. Blend the Soup: Once the carrots are cooked, use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a countertop blender and blend until smooth.
  4. Add Creaminess: If desired, stir in the coconut milk or heavy cream for a richer texture. Season the soup with salt and pepper to taste.
