Pomegranate-Studded Couscous

This pomegranate-studded couscous is a flavorful and colorful dish that makes a perfect side or light main course. The combination of fluffy couscous, sweet pomegranate seeds, and fresh herbs creates a delightful balance of textures and flavors.

Ingredients

  • 1 cup couscous
  • 1 1/4 cups vegetable broth or water (find my broth recipes HERE and HERE)
  • 1 cup pomegranate seeds
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint (optional)
  • 1/4 cup sliced almonds or walnuts, toasted
  • 1/4 cup diced cucumber (optional)
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions
1. In a medium saucepan, bring the vegetable broth (or water) to a boil.
2. Once boiling, remove from heat and stir in the couscous. Cover the saucepan and let it sit for about 5 minutes, or until the couscous has absorbed the liquid.
3. Fluff the couscous with a fork and let it cool slightly.
4. In a large mixing bowl, combine the fluffed couscous, pomegranate seeds, chopped parsley, chopped mint (if using), toasted nuts, and diced cucumber (if using).
5. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
6. Drizzle the dressing over the couscous mixture and toss gently to combine.
7. Taste and adjust the seasoning as needed.
8. Serve the pomegranate-studded couscous warm or at room temperature. Enjoy this refreshing and nutritious dish!
