Pomegranate Glazed Roasted Carrots

These pomegranate glazed roasted carrots are a delightful side dish that combines the natural sweetness of carrots with a tangy pomegranate glaze. They make for a beautiful and flavorful addition to any meal!

Ingredients

  • 1 pound carrots, peeled and cut into sticks or rounds
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup pomegranate molasses
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon fresh thyme or rosemary (optional)
  • 1/2 cup pomegranate seeds (for garnish)
  • Fresh parsley or mint (for garnish, optional)

Instructions
1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
2. In a large bowl, toss the carrot sticks with olive oil, salt, and pepper until they are evenly coated.
3. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
4. Roast the carrots in the preheated oven for about 25-30 minutes, or until they are tender and caramelized, tossing halfway through for even roasting.
5. While the carrots are roasting, in a small saucepan, combine the pomegranate molasses and honey (or maple syrup). Heat over medium-low heat, stirring until smooth and well combined. Remove from heat and set aside.
6. Once the carrots are done roasting, remove them from the oven and drizzle the pomegranate glaze over the hot carrots. Toss gently to coat.
7. If using, sprinkle fresh thyme or rosemary over the glazed carrots.
8. Transfer the carrots to a serving dish and garnish with pomegranate seeds and fresh parsley or mint, if desired.
9. Serve warm and enjoy the delicious flavors of these pomegranate glazed roasted carrots!
