Ingredients
• 1 cup bulgur wheat, rinsed and drained
• 1 1/2 cups boiling water
• 1 cup pomegranate seeds
• 1 cup fresh parsley, finely chopped
• 1/2 cup fresh mint leaves, finely chopped
• 1/2 cup cherry tomatoes, diced
• 1/4 cup green onions, chopped
• 1/4 cup olive oil
• 2 tablespoons lemon juice
• Salt and pepper to taste
Instructions
1. In a large bowl, combine bulgur wheat and boiling water. Cover and let it sit for about 15-20 minutes, or until the bulgur is tender and has absorbed the water. Fluff with a fork.
