Pomegranate and Mint Tabouli

This vibrant pomegranate and mint tabouli is a refreshing twist on the traditional Middle Eastern salad. It combines fresh herbs, bulgur wheat, and the sweetness of pomegranate seeds for a flavorful and colorful dish.

Ingredients
• 1 cup bulgur wheat, rinsed and drained
• 1 1/2 cups boiling water
• 1 cup pomegranate seeds
• 1 cup fresh parsley, finely chopped
• 1/2 cup fresh mint leaves, finely chopped
• 1/2 cup cherry tomatoes, diced
• 1/4 cup green onions, chopped
• 1/4 cup olive oil
• 2 tablespoons lemon juice
• Salt and pepper to taste

Instructions
1. In a large bowl, combine bulgur wheat and boiling water. Cover and let it sit for about 15-20 minutes, or until the bulgur is tender and has absorbed the water. Fluff with a fork.
2. Add the pomegranate seeds, parsley, mint, cherry tomatoes, and green onions to the bulgur and mix gently to combine.
3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
4. Drizzle the dressing over the tabouli and toss gently to coat all the ingredients.
