Pomegranate and Lemon Sorbet

This refreshing pomegranate and lemon sorbet is a light and tangy dessert that’s perfect for warm weather. With its vibrant color and delicious flavor, it’s sure to impress your guests or provide a delightful treat for yourself!

Ingredients
• 2 cups pomegranate juice (freshly squeezed or store-bought)
• 1/2 cup granulated sugar (adjust to taste)
• 1/2 cup water
• 1/4 cup freshly squeezed lemon juice
• Zest of 1 lemon
• Pinch of salt

Instructions
1. In a small saucepan, combine the water and sugar over medium heat. Stir until the sugar is completely dissolved to create a simple syrup. Remove from heat and let it cool.
2. In a mixing bowl, combine the pomegranate juice, freshly squeezed lemon juice, lemon zest, and a pinch of salt. Pour in the cooled simple syrup and mix well.
3. Taste the mixture and adjust the sweetness by adding more sugar if desired.
4. Pour the mixture into a shallow dish or a freezer-safe container.
5. Place the dish in the freezer and freeze for about 2 hours.
6. After 2 hours, use a fork to scrape and stir the mixture, breaking up any ice crystals. Return it to the freezer.
7. Continue to freeze, scraping every 30 minutes for about 2-3 hours, until the sorbet is fully frozen and has a fluffy texture.
8. Once ready, scoop the sorbet into bowls or cups and garnish with fresh pomegranate seeds or lemon slices if desired.
9. Serve immediately and enjoy your refreshing pomegranate and lemon sorbet!
