Ingredients
• 2 large red bell peppers
• 1 cup walnuts, toasted
• 2 garlic cloves, minced
• 2 tablespoons pomegranate molasses
• 1 tablespoon lemon juice
• 1 teaspoon ground cumin
• 1/2 teaspoon smoked paprika (or regular paprika)
• 1/4 teaspoon cayenne pepper (adjust to taste)
• 1/4 cup olive oil
• Salt and pepper to taste
• Fresh parsley (for garnish, optional)
Instructions
1. Preheat your oven to 425 degrees Fahrenheit.
2. Place the red bell peppers on a baking sheet and roast them in the oven for about 25-30 minutes, turning occasionally, until the skins are charred and blistered. Remove from the oven and let them cool. Once cool, peel off the skins, remove the stems and seeds, and chop the peppers.
3. In a food processor, combine the roasted red peppers, toasted walnuts, minced garlic, pomegranate molasses, lemon juice, ground cumin, smoked paprika, and cayenne pepper.
4. Pulse until the mixture is smooth, scraping down the sides as needed.
5. With the food processor running, slowly drizzle in the olive oil until fully combined and smooth.
6. Taste and season with salt and pepper as needed.
7. Transfer the muhammara to a serving bowl and garnish with fresh parsley if desired.
8. Serve with pita bread, crackers, or fresh vegetables. Enjoy your delicious muhammara!
