Brie and Leek Tart

This savory brie and leek tart combines the rich creaminess of brie cheese with the sweet, mild flavor of leeks, all encased in a flaky pastry crust. Perfect for a brunch, appetizer, or light dinner, this tart is sure to impress.

Ingredients

  • 1 sheet of puff pastry, thawed
  • 2 leeks, cleaned and sliced (white and light green parts only)
  • 8 ounces brie cheese, sliced
  • 3 large eggs
  • 1 cup heavy cream or milk
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh thyme or chives (for garnish, optional)

Instructions
1. Preheat your oven to 375 degrees Fahrenheit.
2. In a skillet, heat olive oil over medium heat and sauté the sliced leeks until softened, about 5 to 7 minutes. Season with salt and pepper, then remove from heat.
3. Roll out the puff pastry and fit it into a tart pan or pie dish, trimming any excess. Prick the bottom with a fork to prevent puffing.
4. Arrange the sautéed leeks evenly over the pastry, then layer the brie cheese slices on top.
5. In a bowl, whisk together the eggs and heavy cream (or milk) until well combined. Season with salt and pepper.
6. Pour the egg mixture over the leeks and brie in the tart shell.
7. Bake in the preheated oven for 30 to 35 minutes, or until the tart is golden brown and the filling is set.
