Ingredients:
- 2 tablespoons olive oil
- 1 onion, roughly chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, smashed
- 1 bay leaf

- 1 teaspoon black peppercorns
- 8 cups water
