Ginger Chews

These chewy delights combine the warm, spicy flavor of ginger with a satisfying texture. Perfect as a snack or for soothing an upset stomach, they are easy to make at home.

Ingredients:

  • 1 cup fresh ginger, peeled and finely grated
  • 1 cup honey or maple syrup
  • Lemon juice squeezed from 1 lemon
  • Orange juice squeezed from 1 orange
  • 1/2 cup water
  • 1/4 teaspoon salt
  • Powdered sugar, for dusting (optional)

Instructions:
1. In a saucepan, combine the grated ginger, honey (or maple syrup), lemon juice, orange juice, water, and salt.
2. Bring the mixture to a boil over medium heat, then reduce to a simmer.
3. Cook for about 30-40 minutes, stirring occasionally, until the mixture thickens and reaches a chewy consistency.
4. Pour the mixture onto a parchment-lined baking sheet and spread it out evenly.
5. Allow it to cool completely at room temperature, then cut into bite-sized pieces.
6. Dust with powdered sugar if desired and store in an airtight container.
