Tamales

Tamales are a traditional Mexican dish that consists of masa (corn dough) filled with a variety of ingredients, wrapped in corn husks, and steamed to perfection. This beloved comfort food is often enjoyed during celebrations and gatherings, making them a symbol of culture and community. The versatility of tamales allows for endless variations, with fillings ranging from savory meats and cheeses to sweet fruits and chocolates. Whether served with salsa or enjoyed on their own, tamales are a delightful treat that brings warmth and flavor to any meal.

Ingredients:

For the Masa:

  • 2 cups masa harina (corn flour)
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup vegetable shortening or lard
  • 1 to 1 1/2 cups chicken or vegetable broth (as needed) (find my broth recipes HERE and HERE)

For the Filling:

  • 2 cups cooked and shredded meat (such as chicken, pork, or beef) or a vegetarian option like beans and cheese
  • 1 cup salsa or sauce of choice (optional)
  • Optional spices or seasonings (such as cumin, chili powder, or garlic powder)

For Wrapping:

  • * Dried corn husks (soaked in warm water for about 30 minutes)

Instructions:
1. In a mixing bowl, combine the masa harina, baking powder, and salt.
2. In a separate bowl, beat the vegetable shortening or lard until fluffy. Gradually add the masa mixture to the shortening, alternating with the chicken or vegetable broth until you achieve a smooth, spreadable dough. The masa should be light and airy.
3. In another bowl, mix your chosen filling ingredients, ensuring they are well combined.
4. Drain the soaked corn husks and pat them dry. Lay a husk flat on a clean surface.
5. Spread about 2 tablespoons of masa dough onto the center of the husk, leaving some space at the edges.
6. Place a spoonful of the filling down the center of the masa.
7. Fold the sides of the husk over the masa and filling, then fold up the bottom to secure the tamale. Repeat with the remaining husks and filling.
8. Arrange the tamales upright in a steamer pot, or place them on their sides if necessary. Steam for about 1 to 1.5 hours, or until the masa pulls away easily from the husk.
9. Once cooked, remove the tamales from the steamer and let them cool slightly before serving.
