Stuffed Pumpkin

Stuffed pumpkin is a delightful and visually stunning dish that combines the earthy sweetness of pumpkin with a savory filling of grains, vegetables, and spices. Ingredients:
• 1 small to medium pumpkin (about 3-4 pounds)
• 1 cup cooked quinoa, rice, or couscous
• 1 cup cooked vegetables (such as spinach, mushrooms, or bell peppers)
• 1/2 cup chopped nuts (such as walnuts or pecans)
• 1/2 cup dried cranberries or raisins
• 1 teaspoon ground cinnamon
• 1/2 teaspoon nutmeg
• Salt and pepper to taste
• 1/2 cup feta cheese or goat cheese (optional)
• Olive oil for drizzling

Instructions:
1. Preheat your oven to 375°F (190°C).
2. Cut the top off the pumpkin and scoop out the seeds and stringy insides, creating a hollow cavity.
3. In a large bowl, combine the cooked quinoa, vegetables, nuts, dried fruit, cinnamon, nutmeg, salt, and pepper. If using, fold in the cheese.
4. Stuff the pumpkin with the filling mixture, pressing down gently to pack it in.
5. Place the stuffed pumpkin in a baking dish and drizzle the top with olive oil. Replace the pumpkin lid.
6. Bake in the preheated oven for 45-60 minutes, or until the pumpkin is tender and easily pierced with a fork.
7. Remove from the oven and let it cool slightly before slicing into wedges to serve. Enjoy this flavorful and festive dish!
