Spanakopita is a delicious Greek pastry made with layers of flaky phyllo dough filled with a savory mixture of spinach, feta cheese, and herbs. This dish is perfect as an appetizer, snack, or even a light meal.
Ingredients
For the filling:
• 1 pound fresh spinach (or 1 package frozen chopped spinach, thawed and drained)
• 1 cup feta cheese, crumbled
• 1/2 cup ricotta cheese (optional)
• 1/2 cup green onions or scallions, chopped
• 1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)
• 1/4 cup fresh parsley, chopped
• 2 large eggs, beaten
• 1/4 teaspoon nutmeg (optional)
• Salt and pepper, to taste
For assembly:
• 1 package phyllo dough (16 oz), thawed
• 1/2 cup unsalted butter, melted (or olive oil)
• Sesame seeds (optional, for sprinkling)
Instructions
1. Prepare the filling: If using fresh spinach, wash and chop it. In a large skillet over medium heat, sauté the spinach until wilted and any excess moisture has evaporated. Allow it to cool slightly, then chop. If using frozen spinach, ensure it is well-drained and chopped.
2. In a mixing bowl, combine the chopped spinach, crumbled feta cheese, ricotta cheese (if using), chopped green onions, dill, parsley, beaten eggs, nutmeg (if using), salt, and pepper. Mix until well combined and set aside.
3. Preheat the oven to 375°F (190°C) and grease a baking sheet or a large baking dish.
4. Assemble the spanakopita: Take one sheet of phyllo dough and lay it on a clean surface. Brush it lightly with melted butter. Place another sheet on top and brush with more butter. Repeat this process until you have about 4-6 layers of phyllo dough.
5. Spoon a portion of the spinach filling along one edge of the phyllo, leaving a border around the edges. Fold the sides of the phyllo over the filling and roll it up tightly to form a log or cylinder. Place seam-side down on the prepared baking sheet.
6. Repeat the process with the remaining phyllo dough and filling, arranging the rolled spanakopita on the baking sheet. Brush the tops with melted butter and sprinkle with sesame seeds, if desired.
7. Bake: Bake in the preheated oven for 25-30 minutes, or until the spanakopita is golden brown and crispy.
8. Cool and serve: Allow the spanakopita to cool slightly before serving. Enjoy warm or at room temperature!
