Ingredients

  • 1 cup ramps, cleaned and roughly chopped (harvest only 1 leaf from each plant to encourage sustainable production)
  • 1/2 cup nuts (pine nuts, walnuts, or almonds)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions
1. In a food processor, combine the ramps, nuts, and Parmesan cheese; pulse until coarsely chopped.
2. With the processor running, slowly drizzle in the olive oil until the mixture reaches your desired consistency.
