Pumpkin hummus is a delicious and unique twist on the traditional chickpea dip, combining the creamy texture of hummus with the rich flavors of pumpkin and warm spices. This vibrant and nutritious spread is perfect for snacking, as a sandwich spread, or served as an appetizer with fresh vegetables or pita chips.

Ingredients:
- 1 cup canned pumpkin puree (or roasted pumpkin)
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tablespoons tahini
- 2 tablespoons olive oil
- 1-2 tablespoons lemon juice (to taste)
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- Water (as needed for desired consistency)
- Optional toppings: olive oil, pumpkin seeds, or paprika

Instructions:
1. In a food processor, combine the pumpkin puree, chickpeas, tahini, olive oil, lemon juice, cumin, cinnamon, salt, and pepper.
2. Blend until smooth, scraping down the sides as needed. If the hummus is too thick, add water a tablespoon at a time until you reach the desired consistency.
3. Taste and adjust seasoning as needed, adding more lemon juice, salt, or spices to your preference.
4. Transfer the pumpkin hummus to a serving bowl and drizzle with olive oil.
5. Garnish with pumpkin seeds or a sprinkle of paprika if desired. Serve with fresh veggies, pita chips, or crackers.
