Polenta is a versatile and comforting dish made from ground cornmeal, offering a creamy texture and rich corn flavor that can be enjoyed in a variety of ways. This Italian staple can be served soft and creamy as a side dish, allowed to set and sliced for grilling or frying, or even used as a base for savory toppings like sauces, vegetables, or meats. Whether enjoyed on its own or as a canvas for other flavors, polenta is a delicious and easy-to-make option that brings warmth and satisfaction to any meal.
Ingredients:
- 1 cup cornmeal (preferably coarse or medium)
- 4 cups water or broth (vegetable or chicken) (find my broth recipes HERE and HERE)
- 1 teaspoon salt
- 2 tablespoons butter or olive oil (optional)
- 1/2 cup grated Parmesan cheese (optional)
- Optional toppings: sautéed mushrooms, roasted vegetables, marinara sauce, or your choice of protein
Instructions:
1. In a large saucepan, bring the water or broth to a boil. Add the salt.
2. Gradually whisk in the cornmeal, stirring constantly to avoid lumps.
3. Reduce the heat to low and continue to cook, stirring frequently, for about 20-30 minutes, or until the polenta thickens and pulls away from the sides of the pan.
4. If desired, stir in the butter or olive oil and grated Parmesan cheese for added flavor and creaminess.
5. For creamy polenta, serve immediately as a side dish, topped with your favorite ingredients.
6. If you prefer firmer polenta, pour the cooked mixture into a greased dish and let it cool for about 30 minutes until set. Once firm, slice it into pieces.
7. You can grill or fry the sliced polenta in a little oil until golden brown on both sides.
8. Serve the polenta warm, topped with sautéed mushrooms, roasted vegetables, marinara sauce, or any toppings of your choice.
9. Enjoy this delicious polenta as a comforting and versatile dish that can complement any meal!
