Pine Needle Soda

This pine needle soda uses natural fermentation to create a refreshing, lightly carbonated beverage without the use of yeast. It’s a unique drink that captures the essence of pine and is perfect for warm days.

Ingredients

  • 1 cup fresh pine needles (make sure they are from a safe, non-toxic pine tree)
  • 4 cups filtered water
  • 1 cup granulated sugar
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 teaspoon salt (optional, for flavor)

Instructions
1. Rinse the fresh pine needles thoroughly to remove any dirt or debris.
2. In a large jar or pitcher, combine the rinsed pine needles, filtered water, granulated sugar, lemon juice, and salt (if using).
3. Stir well until the sugar is fully dissolved.
4. Cover the jar or pitcher with a clean cloth or paper towel secured with a rubber band to allow airflow while keeping contaminants out.
5. Let the mixture sit at room temperature for 2-5 days, depending on the ambient temperature and desired level of fermentation. Check daily for bubbles, which indicate fermentation.
6. Once the soda has reached your desired level of fizziness, strain out the pine needles and transfer the liquid to bottles, leaving some space at the top.
7. Seal the bottles tightly and refrigerate to slow down fermentation. Consume within a week for the best flavor and freshness.
8. Serve chilled, and enjoy your homemade pine needle soda!

Note: Always ensure that the pine needles you use are from a safe and non-toxic species, and avoid using any trees that may have been treated with chemicals or pesticides.
