Pavlova

Ingredients
• 4 large egg whites
• 1 cup granulated sugar
• 1 teaspoon white vinegar
• 1 teaspoon tapioca flour
• 1 teaspoon vanilla extract
• 1 cup heavy whipping cream
• 2 tablespoons powdered sugar (for sweetening cream)
• Fresh fruit (such as berries, kiwi, or passion fruit) for topping

Instructions
1. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
2. In a clean bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.
3. Gradually add the granulated sugar, beating on high speed until stiff peaks form and the mixture is glossy.
4. Gently fold in the vinegar, tapioca flour, and vanilla extract until just combined.
5. Spoon the meringue onto the prepared baking sheet, shaping it into a round disc with a slight indentation in the center.
6. Bake for 1 hour, then turn off the oven and let the pavlova cool in the oven with the door slightly ajar.
7. Once cooled, whip the heavy cream with powdered sugar until soft peaks form.
8. Carefully transfer the pavlova to a serving platter, top with whipped cream, and arrange fresh fruit on top.
9. Serve immediately, and enjoy the delightful combination of textures and flavors.
