Pão de Queijo

• 1 cup tapioca flour (also known as tapioca starch)

• 2 large eggs
• Optional: additional spices or herbs for flavor (such as garlic powder or oregano)

Instructions:
1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin or line it with paper liners.
2. In a saucepan over medium heat, combine the milk, oil (or butter), and salt. Bring to a simmer, stirring occasionally.
3. Once the mixture is hot, remove it from the heat and add the tapioca flour, stirring until well combined. The mixture will be thick and sticky.
4. Let the dough cool for a few minutes, then add the grated cheese and eggs. Mix until a smooth dough forms. If desired, add any additional spices or herbs for flavor.
5. Use a spoon or cookie scoop to fill the muffin tin with the dough, filling each cup about three-quarters full.
6. Bake in the preheated oven for about 15-20 minutes, or until the tops are lightly golden and puffed up.
7. Remove from the oven and let the pão de queijo cool slightly before transferring them to a wire rack.
