1. Break the matzo sheets into small pieces and place them in a large bowl.
2. Pour hot water over the matzo pieces and let them soak for about 5 minutes until softened. Drain any excess water and gently press the matzo to remove moisture.

4. Add the softened matzo to the egg mixture and stir to combine.

7. Cook for about 3-4 minutes until the bottom is golden brown, then carefully flip it over using a spatula or by cutting it into sections to make flipping easier. Cook for an additional 2-3 minutes until the other side is also golden brown.
8. Remove from the skillet and let cool slightly before cutting into portions.
