Matzo Ball Soup

Ingredients:

For the Matzo Balls:

  • 1 cup matzo meal
  • 4 large eggs
  • 1/4 cup vegetable oil
  • 1/4 cup water or chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: 1 tablespoon fresh herbs (such as dill or parsley)

For the Soup:

  • 8 cups chicken broth (find my broth recipes HERE and HERE)
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions:
1. In a large bowl, whisk together the eggs, vegetable oil, water (or chicken broth), salt, and pepper until well combined.
2. Gradually stir in the matzo meal until fully incorporated. If desired, fold in fresh herbs for added flavor. Cover the mixture and refrigerate for at least 30 minutes to allow it to firm up.
3. In a large pot, bring the chicken broth to a boil. Add the sliced carrots, celery, onion, and minced garlic. Reduce the heat and let the vegetables simmer for about 10-15 minutes until tender.
4. While the soup simmers, wet your hands and shape the matzo mixture into balls, about 1 inch in diameter.
5. Once the vegetables are tender, carefully drop the matzo balls into the simmering broth. Cover the pot and let them cook for about 20-25 minutes, or until the matzo balls have expanded and are cooked through.
6. Taste the broth and adjust the seasoning with salt and pepper as needed.
7. Serve the soup hot, garnished with fresh parsley.
