Ingredients
For the Tart Crust:
- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 2 tablespoons ice water (more if needed)
For the Filling:
- 3 large eggs
- 1 cup honey
- 1/2 cup fresh lemon juice (about 2-3 lemons)
- Zest of 1 lemon
- 1 teaspoon dried culinary lavender (plus extra for garnish)
- 1/4 cup heavy cream
- Pinch of salt
For Garnish:
- Fresh lavender sprigs (optional)
- Lemon slices (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium mixing bowl, whisk together the flour, powdered sugar, and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- In a small bowl, combine the egg yolk and ice water. Add this mixture to the flour mixture and stir until the dough comes together. If it is too crumbly, add more ice water, one teaspoon at a time.
- Press the dough into a 9-inch tart pan evenly across the bottom and up the sides. Prick the bottom with a fork to prevent bubbling.
- Bake in the preheated oven for about 15-20 minutes, or until lightly golden. Remove from the oven and let it cool.
- In a saucepan over low heat, combine the honey, lemon juice, lemon zest, lavender, and a pinch of salt. Heat until warm, but do not boil. Remove from heat and let steep for about 10 minutes to infuse the lavender.
- In a large mixing bowl, whisk the eggs until frothy. Slowly whisk in the honey-lemon mixture.
- Stir in the heavy cream until well combined.
- Strain the mixture through a fine-mesh sieve into the cooled tart crust to remove the lavender flowers.
