Homemade Jam

Homemade jam is a delicious way to preserve seasonal fruits and enjoy their flavors year-round. This simple recipe allows you to create a variety of jams using your favorite fruits, and it can be customized with spices or citrus for added flavor.

Ingredients

  • 2 pounds of fruit (such as strawberries, raspberries, blueberries, peaches, or a combination)
  • 1 cup granulated sugar or honey (adjust according to the sweetness of the fruit)
  • 1 tablespoon lemon juice (freshly squeezed)
  • Optional: 1/2 teaspoon vanilla extract or spices (like cinnamon or ginger)
  • Optional: Pectin (if desired for thicker consistency, follow package instructions)

Instructions

1. Prepare the fruit: Wash and clean the fruit thoroughly. If using larger fruits like peaches or plums, pit and chop them into small pieces. For berries, simply remove any stems and leaves.

2. Mash the fruit: In a large mixing bowl, use a potato masher or fork to mash the fruit to your desired consistency. You can leave it chunky or make it smoother, depending on your preference.

3. Cook the mixture: In a large saucepan, combine the mashed fruit, granulated sugar or honey, lemon juice, and any optional flavorings (like vanilla or spices). Stir well to combine. Cook over medium heat, stirring frequently until the mixture comes to a gentle boil.

4. Simmer: Continue to cook the fruit mixture for about 15-20 minutes, stirring often. If using pectin, follow the instructions on the package during this step. The jam should thicken and bubble. To test for doneness, place a spoonful of jam on a plate and let it cool for a minute. Run your finger through it; if it holds its shape and doesn’t run back together, it’s ready.

5. Jar the jam: Remove the saucepan from heat and let it cool slightly. Carefully ladle the hot jam into sterilized glass jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars with a clean cloth to remove any residue.

6. Seal the jars: If you plan to can the jam, place sterilized lids on the jars and screw the bands on until fingertip-tight. Process the jars in a boiling water bath for 5-10 minutes (adjust based on altitude) to ensure they seal properly. If not canning, simply let the jars cool to room temperature and store them in the refrigerator.

7. Store: Once sealed, let the jars cool completely at room temperature. Store the jam in the refrigerator for up to 3 weeks or in a cool, dark place for up to a year if properly canned.

8. Enjoy: Spread your homemade jam on toast, pancakes, or waffles, or use it as a filling for pastries, desserts, or yogurt.
