Ginger Pear Scones

These Ginger Pear Scones are soft, flaky pastries bursting with fresh pear pieces and warm ginger flavor. Perfect for breakfast or an afternoon treat, they are delicious served with butter or clotted cream.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup ripe pears, peeled and diced
  • 1/4 cup crystallized ginger, chopped
  • 3/4 cup heavy cream (plus extra for brushing)
  • 1 teaspoon vanilla extract

Instructions

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, ground ginger, and cinnamon until well combined.
3. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
4. Gently fold in the diced pears and chopped crystallized ginger.
5. In a separate bowl, combine the heavy cream and vanilla extract. Pour the cream mixture into the flour mixture and stir until just combined. Do not overmix.
6. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a circle about 1-inch thick.
7. Cut the dough into 8 wedges and place them on the prepared baking sheet. Brush the tops with a little extra heavy cream.
8. Bake for 18-22 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.
9. Allow the scones to cool slightly on the baking sheet before transferring them to a wire rack.
10. Serve warm or at room temperature, optionally with butter or clotted cream. Enjoy!
