Dandelion blossom fritters are a delicious and unique treat that celebrates the bright flavors of fresh dandelion flowers. These crispy fritters are perfect for a snack or as a fun appetizer.

Ingredients
- 1 cup fresh dandelion blossoms (make sure they are from a safe, non-toxic source)
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon onion powder (optional)
- 1 cup cold water (or enough to make a batter)
- Oil for frying




Instructions
1. Gently rinse the dandelion blossoms to remove any dirt or insects, then set them aside to dry.
2. In a mixing bowl, combine the flour, cornmeal, baking powder, salt, garlic powder, and onion powder (if using).
3. Gradually add cold water to the dry ingredients, whisking until you have a smooth batter. The consistency should be similar to pancake batter; adjust the amount of water as needed.
4. Heat about 1 inch of oil in a deep skillet or frying pan over medium heat. You can test if the oil is ready by dropping a small amount of batter into the oil; it should sizzle and rise to the surface.
5. Dip each dandelion blossom into the batter, coating it well, then carefully place it into the hot oil. Fry in batches, being careful not to overcrowd the pan.
6. Cook the fritters for about 2-3 minutes on each side, or until they are golden brown and crispy.
7. Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
8. Serve warm, optionally with a dipping sauce such as honey, aioli, or your favorite dressing.
