Dandelion and Cheese Scones

These dandelion and cheese scones are a delightful combination of savory and slightly bitter flavors, perfect for a brunch or afternoon snack. The addition of fresh dandelion greens adds a nutritious twist to the classic scone.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 1 cup shredded cheese (cheddar, feta, or your choice)
  • 1 cup fresh dandelion greens, washed and chopped
  • 3/4 cup milk (or buttermilk)
  • 1 tablespoon honey (optional)

Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, whisk together the flour, baking powder, and salt.
3. Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to work it into the flour until it resembles coarse crumbs.
4. Stir in the shredded cheese and chopped dandelion greens until evenly distributed.
5. In a separate bowl, mix the milk and honey (if using) together.
6. Pour the milk mixture into the flour mixture and stir until just combined. Do not overmix.
7. Turn the dough out onto a floured surface and gently knead it a few times until it comes together.
8. Pat the dough into a circle about 1 inch thick and cut it into triangles or use a round cutter to make individual scones.
9. Place the scones on the prepared baking sheet, spacing them apart slightly.
10. Bake for 15-20 minutes, or until the scones are golden brown on top.
11. Allow to cool slightly before serving. Enjoy warm or at room temperature!
