Cornmeal Polenta Fries

Cornmeal polenta fries are a deliciously crispy and satisfying snack or side dish that offers a fun twist on traditional fries. Made from creamy polenta that is allowed to set and then sliced into fry shapes, these versatile treats can be seasoned in a variety of ways to suit your taste. Baked or fried to golden perfection, cornmeal polenta fries are perfect for dipping in sauces or serving alongside your favorite meals, adding a delightful crunch and flavor to any plate.

Ingredients:

  • 1 cup cornmeal
  • 4 cups water or vegetable broth (find my broth recipes HERE and HERE)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 cup grated Parmesan cheese (optional)
  • Olive oil (for brushing or frying)
  • Optional: herbs or spices for seasoning (such as paprika, Italian seasoning, or cayenne pepper)

Instructions:
1. In a saucepan, bring the water or broth to a boil. Add the salt.
2. Gradually whisk in the cornmeal, stirring constantly to avoid lumps.
3. Reduce the heat to low and continue to cook, stirring frequently, for about 20-25 minutes, or until the polenta thickens and pulls away from the sides of the pan.
4. Stir in the black pepper, garlic powder, and Parmesan cheese (if using) until well combined.
5. Pour the cooked polenta into a greased baking dish or onto a parchment-lined baking sheet, spreading it out evenly to about 1/2 inch thick. Let it cool and set for at least 30 minutes, or until firm.
6. Preheat your oven to 425°F (220°C) if baking. If frying, heat about 1/2 inch of olive oil in a large skillet over medium-high heat.
7. Once the polenta is set, cut it into fry shapes.
8. If baking: Place the polenta fries on a greased baking sheet, brush them lightly with olive oil, and season with your choice of herbs or spices. Bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
9. If frying: Carefully add the polenta fries to the hot oil in batches, frying for about 3-4 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
10. Serve the cornmeal polenta fries hot, with your favorite dipping sauces or as a side to your main dishes.
