Cornmeal Biscuits

Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar (optional)
  • 1/2 cup cold butter, cut into small pieces
  • 1 cup milk or buttermilk

Instructions:
1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, salt, and sugar (if using) until well combined.
3. Add the cold butter pieces to the dry ingredients and use a pastry cutter or your fingers to work the butter into the mixture until it resembles coarse crumbs.
4. Pour in the milk or buttermilk and stir until just combined. Be careful not to overmix; the dough should be slightly sticky.
5. Turn the dough out onto a lightly floured surface and gently knead it a couple of times until it comes together.
6. Pat the dough to about 1/2-inch thickness and use a biscuit cutter to cut out biscuits. Place them on the prepared baking sheet, close together but not touching.
7. Bake in the preheated oven for about 12-15 minutes, or until the biscuits are golden brown on top.
8. Remove from the oven and let cool slightly before serving.
