Ingredients

Instructions
1. Make the pizza dough: In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until it becomes frothy.
2. In a large mixing bowl, combine 3 1/2 cups of flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough starts to form.
3. Knead the dough: Transfer the dough to a floured surface and knead for about 5-7 minutes, adding more flour as needed, until the dough is smooth and elastic.
4. Let the dough rise: Place the dough in a greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
5. Prepare the filling: In a mixing bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, cooked spinach, garlic powder, oregano, salt, black pepper, and optional Italian sausage or pepperoni. Mix well to combine.
6. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
7. Shape the calzones: Punch down the risen dough and divide it into 4-6 equal portions. Roll each portion into a circle about 6-8 inches in diameter.
8. Fill the calzones: Spoon a generous amount of the filling onto one half of each dough circle, leaving a border around the edge. Fold the other half of the dough over the filling and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.
9. Prepare the egg wash: In a small bowl, whisk together the egg and water. Brush the tops of the calzones with the egg wash to give them a shiny finish.
10. Bake: Bake the calzones in the preheated oven for 20-25 minutes, or until they are golden brown.
