- 2 tablespoons olive oil
- 1 teaspoon ground ginger (optional)
- Salt and pepper to taste

Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until softened and translucent.
2. Stir in the minced garlic and ground ginger (if using), cooking for an additional minute until fragrant.
3. Add the chopped beetroots and apples to the pot, stirring to combine.
