Beet Risotto

Ingredients:

  • 1 cup Arborio rice
  • 2 medium beets, roasted and peeled, then grated or finely chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1/2 cup white wine (optional)
  • 1/2 cup grated Parmesan cheese (or a vegan alternative)
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or thyme) for garnish

Instructions:
1. In a saucepan, heat the vegetable or chicken broth over low heat, keeping it warm throughout the cooking process.
2. In a large skillet or saucepan, heat the olive oil or butter over medium heat. Add the chopped onion and sauté for about 5 minutes, or until softened and translucent.
3. Stir in the minced garlic and cook for an additional minute until fragrant.
4. Add the Arborio rice to the pan, stirring to coat the grains with the oil and toasting them for about 1-2 minutes.
5. If using, pour in the white wine and cook, stirring continuously, until the wine is mostly absorbed.
6. Begin adding the warm broth, one ladleful at a time, stirring frequently and allowing the rice to absorb the liquid before adding more. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
7. When the rice is nearly done, stir in the grated beets, allowing them to warm through and incorporate into the risotto.
8. Remove the risotto from heat and stir in the grated Parmesan cheese, seasoning with salt and pepper to taste.
