Beet Kvass

Ingredients:
• 2 medium beets, peeled and chopped into small cubes
• 4 cups filtered water
• 1 tablespoon sea salt
• 1 tablespoon whey (optional, for faster fermentation)
• A clean glass jar with a lid

Instructions:
1. In a large bowl, dissolve the sea salt in the filtered water.
2. Add the chopped beets to the jar, filling it about halfway. If using whey, add it to the jar as well.
3. Pour the salted water over the beets, ensuring they are fully submerged. Leave some headspace at the top of the jar to allow for fermentation.
4. Seal the jar loosely with a lid to enable gases to escape during fermentation.
5. Place the jar in a cool, dark area at room temperature for 3 to 7 days, depending on your taste preference. Check daily, and if necessary, press down the beets to keep them submerged.
6. Once fermented to your liking, strain the kvass into another clean jar or bottle, discarding the solids.
7. Store the beet kvass in the refrigerator, where it can last for several weeks.
