Instructions:
1. Preheat your oven to 400°F (200°C) if you need to roast the beets. Wrap the beets in aluminum foil and roast for about 45-60 minutes, or until tender. Allow them to cool before peeling and slicing them into wedges or rounds.
2. In a large mixing bowl, combine the roasted beets and orange segments.
