Beet and Avocado Sushi

Beet and avocado sushi is a vibrant and nutritious twist on traditional sushi rolls, combining the earthy sweetness of beets with the creamy richness of avocados. This colorful dish not only offers a delightful contrast in flavors and textures but also provides a healthy alternative to classic sushi fillings. The beautiful pink hue of the beet adds visual appeal, making it a perfect option for gatherings or a fun homemade sushi night. Ingredients:
• 1 cup sushi rice
• 1 1/4 cups water
• 2 tablespoons rice vinegar
• 1 tablespoon sugar
• 1/2 teaspoon salt
• 1 medium beet, roasted and thinly sliced
• 1 ripe avocado, sliced
• 4 sheets of nori (seaweed)
• Soy sauce, for serving
• Optional: sesame seeds or pickled ginger for garnish

Instructions:
1. Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water, then bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is tender and the water is absorbed.
2. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
3. Place a bamboo sushi mat on a clean surface and lay a sheet of nori on top, shiny side down.
4. With wet hands, take a handful of sushi rice and evenly spread it over the nori, leaving about 1 inch of space at the top edge.
5. Arrange a few slices of roasted beet and avocado horizontally across the center of the rice.
6. Carefully lift the edge of the bamboo mat closest to you and roll it away from you, applying gentle pressure to form a tight roll. Continue rolling until you reach the exposed edge of the nori, sealing it with a little water.
7. Using a sharp knife, slice the roll into bite-sized pieces. Repeat the process with the remaining nori sheets and filling ingredients.
8. Arrange the beet and avocado sushi on a platter and serve with soy sauce, garnished with sesame seeds or pickled ginger if desired. Enjoy this colorful and healthy sushi creation!
