Beef Tenderloin

Ingredients

  • 2 to 3 pounds beef tenderloin, trimmed
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)

Instructions
1. Preheat your oven to 425°F (220°C).
2. Pat the beef tenderloin dry with paper towels and season generously with salt, pepper, garlic powder, and rosemary.
3. In a large oven-safe skillet, heat the olive oil over medium-high heat.
4. Sear the beef tenderloin on all sides until browned, about 3-4 minutes per side.
5. Transfer the skillet to the preheated oven and roast for 20-30 minutes, or until the internal temperature reaches your desired doneness (135°F for medium-rare).
6. Remove the skillet from the oven and let the tenderloin rest for 10-15 minutes before slicing.
7. Slice into medallions and serve with your favorite sides.
