Ingredients
* 4 medium russet potatoes, washed and dried
* 2 tablespoons olive oil
* Salt to taste
* 1 cup shredded cheddar cheese
* 1/2 cup cooked and crumbled bacon (optional)
* 1/4 cup sour cream
* 2 green onions, sliced


Instructions
1. Preheat your oven to 400°F (200°C)
2. Prick each potato several times with a fork, then rub with olive oil and sprinkle with salt
3. Bake the potatoes directly on the oven rack for 45-60 minutes, until tender
4. Allow the potatoes to cool slightly, then cut them in half and scoop out the flesh, leaving a thin layer of potato attached to the skin
5. Brush the insides of the potato skins with olive oil and sprinkle with salt
6. Place the skins back in the oven and bake for an additional 10-15 minutes until crispy
7. Remove from the oven and fill each skin with shredded cheddar cheese and crumbled bacon, then return to the oven until the cheese melts
8. Top with sour cream and sliced green onions before serving
