Tarragon and Apple Slaw

Ingredients:
• 2 cups green cabbage, thinly sliced
• 1 cup red cabbage, thinly sliced
• 1 large apple, julienned (such as Granny Smith or Honeycrisp)
• 1/4 cup fresh tarragon leaves, chopped
• 1/4 cup carrots, grated
• 1/4 cup mayonnaise
• 1 tablespoon apple cider vinegar
• 1 tablespoon honey
• Salt and pepper to taste

Instructions:
1. In a large bowl, combine the sliced green cabbage, red cabbage, julienned apple, chopped tarragon, and grated carrots.
2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
3. Pour the dressing over the cabbage mixture and toss to coat evenly.
4. Refrigerate for at least 30 minutes to allow the flavors to meld.
