Spicy Carrot Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound carrots, peeled and chopped

  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1/2 cup coconut milk (optional, for creaminess)
  • Fresh cilantro or parsley for garnish

Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
2. Add the minced garlic and cook for an additional minute, stirring to prevent burning.
3. Stir in the chopped carrots, ground cumin, ground coriander, and red pepper flakes. Cook for another 2-3 minutes, allowing the spices to become fragrant.
4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer until the carrots are tender, about 20 minutes.
5. Using an immersion blender or a regular blender, purée the soup until smooth. If using a regular blender, allow steam to escape carefully.
6. If desired, stir in the coconut milk for added creaminess and season with salt and pepper to taste.
7. Serve the spicy carrot soup warm, garnished with fresh cilantro or parsley. Enjoy this flavorful and invigorating soup as a delicious addition to your meal!
