Scallop Scampi

Ingredients:
• 1 pound sea scallops, patted dry
• 3 tablespoons olive oil
• 3 tablespoons unsalted butter
• 4 cloves garlic, minced
• 1/2 teaspoon red pepper flakes (optional)
• 1/2 cup dry white wine
• 1 tablespoon fresh lemon juice
• 1/4 cup fresh parsley, chopped
• Salt and pepper, to taste
• Cooked pasta or crusty bread (for serving)

Instructions:
1. Season the scallops with salt and pepper on both sides.
2. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat until the butter is melted and bubbling.
3. Add the scallops to the skillet in a single layer, being careful not to overcrowd the pan. Sear the scallops for about 2-3 minutes on one side until golden brown, then flip and cook for an additional 2 minutes. Remove the scallops from the skillet and set aside.
4. In the same skillet, add the remaining tablespoon of butter, minced garlic, and red pepper flakes (if using). Sauté for about 30 seconds until fragrant.
5. Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Allow the sauce to simmer for about 2-3 minutes until slightly reduced.
6. Return the seared scallops to the skillet, tossing them gently in the sauce to coat. Cook for an additional minute to warm through.
7. Stir in the chopped parsley and adjust seasoning with salt and pepper as needed.
8. Serve the scallop scampi immediately over cooked pasta or with crusty bread to soak up the delicious sauce.
