Pumpkin Tortillas

Pumpkin tortillas are a unique and flavorful twist on traditional tortillas, infusing the dough with the rich taste of pumpkin and warm spices. These versatile tortillas can be used for tacos, wraps, or simply enjoyed on their own. They are perfect for adding a festive touch to your meals, especially during the fall season, while being easy to make at home!

Ingredients:
• 1 cup all-purpose flour
• 1 cup masa harina (corn flour)
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon ground nutmeg
• 1/4 teaspoon ground ginger
• 1/2 cup pumpkin puree (canned or fresh)
• 1/4 cup warm water (adjust as needed)
• 2 tablespoons vegetable oil

Instructions:
1. In a large mixing bowl, combine the all-purpose flour, masa harina, baking powder, salt, cinnamon, nutmeg, and ginger. Whisk until well combined.
2. Add the pumpkin puree and vegetable oil to the dry ingredients, mixing until crumbly.
3. Gradually add warm water, a little at a time, until the dough comes together and is soft but not sticky. You may not need all of the water, or you may need a little more, depending on the moisture of the pumpkin.
4. Divide the dough into small balls (about the size of a golf ball) and cover with a damp cloth to keep them moist.
5. Preheat a skillet or griddle over medium heat.
6. Using a tortilla press or a rolling pin, flatten each ball of dough between two pieces of parchment paper or plastic wrap to about 1/8 inch thick.
7. Cook each tortilla in the hot skillet for about 1-2 minutes on each side, until lightly browned and cooked through.
8. Remove the tortillas from the skillet and keep them warm in a clean kitchen towel.
9. Serve your pumpkin tortillas with your favorite fillings, or enjoy them warm as a tasty side!
